Im not a big fan of the Twilight movies, but I have read some behind-the scences stories about the making of the films. According to what Ive read, the actors who played the vampires had to wear special contact lenses to simulate red eyes. All of the actors who wore them complained that they were incredibly painful and consticted their vision. I even read that actress KristenStewart even developed eyes infections as a result of wearing them! Under the circumstances, couldnt the producers of the show simply have used digital tech to color in their eyes?
